For the Cherry Filling
  • 4 cups Cherry pitted fresh or frozen (about 1.5 lbs or 680g)
  • 1/2 cup Granulated sugar
  • 1 tablespoon Lemon juice freshly squeezed
  • 3 tablespoons Cornstarch
  • 1 teaspoon Almond extract
For the Crust and Crumb Topping
  • 1 cup Unsalted butter softened (2 sticks or 226g)
  • 2 cups All-purpose flour
  • 1 1/2 cups Rolled oats divided, old-fashioned
  • 1/2 cup Brown sugar packed
  • 1/4 cup Granulated sugar
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Lemon zest optional, for extra brightness

Method
 

Prepare the Filling
  1. Stir constantly until the mixture thickens and becomes glossy, about 5-7 minutes. Remove from heat and stir in the almond extract. Let cool slightly while preparing the crust.

  1. Stir until the mixture resembles coarse crumbs.
