- Heat olive oil in a large skillet over medium-high heat. Add sliced Italian sausage and cook for 5–7 minutes, turning occasionally, until browned on all sides. Remove sausage and set aside.
- In the same skillet, add sliced onions and bell peppers. Sauté for 8–10 minutes, stirring occasionally, until vegetables are soft and onions are caramelized.
- Add minced garlic, Italian seasoning, and smoked paprika to the skillet. Stir for 1 minute until fragrant.
- If using, pour in white wine or chicken broth to deglaze the pan and scrape up any browned bits.
- Return sausage to the skillet, add diced tomatoes with their juices, and stir to combine. Season with salt and pepper.
- Simmer on low heat, covered, for 15–20 minutes to allow flavors to meld. Adjust seasoning and garnish with fresh basil or parsley before serving.
