Ingredients
  

  • 1 tbsp olive oil
  • 1 lb Italian sausage sweet, mild, or hot
  • 1 large yellow onion sliced into half-moons
  • 3 bell peppers mix of red, yellow, green
  • 4 cloves garlic minced
  • 1 (14.5 oz) diced tomatoes undrained
  • 1 tsp Italian seasoning
  • 1/2 tsp smoked paprika
  • 1/4 cup dry white wine or chicken broth optional
  • salt and black pepper to taste
  • fresh basil or parsley for garnish

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Add sliced Italian sausage and cook for 5–7 minutes, turning occasionally, until browned on all sides. Remove sausage and set aside.
  2. In the same skillet, add sliced onions and bell peppers. Sauté for 8–10 minutes, stirring occasionally, until vegetables are soft and onions are caramelized.
  3. Add minced garlic, Italian seasoning, and smoked paprika to the skillet. Stir for 1 minute until fragrant.
  4. If using, pour in white wine or chicken broth to deglaze the pan and scrape up any browned bits.
  5. Return sausage to the skillet, add diced tomatoes with their juices, and stir to combine. Season with salt and pepper.
  6. Simmer on low heat, covered, for 15–20 minutes to allow flavors to meld. Adjust seasoning and garnish with fresh basil or parsley before serving.
