For the pastry:
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup cold unsalted butter cubed
  • 1/3 cup ice water plus more if needed
For the filling:
  • 1/2 pound sausage or turkey, bacon, or plant-based crumbles
  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cream cheese optional for creaminess
  • 1/2 cup chopped spinach optional
  • 1/4 cup diced onion
  • 1 clove garlic minced
  • salt and pepper to taste
For assembly:
  • 1 egg beaten with 1 tablespoon water
  • sesame seeds or flaky salt optional
