For the Mashed Potato Topping
  • 2.5 pounds Russet potatoes peeled and quartered
  • 0.5 cup unsalted butter softened
  • 0.5 cup whole milk or half-and-half warmed
  • 0.25 cup sour cream or cream cheese optional but recommended
  • Salt and freshly ground black pepper to taste
  • 0.25 cup grated Parmesan cheese or cheddar cheese for browning, optional
For the Savory Meat Filling
  • 1 tablespoon olive oil
  • 1.5 pounds ground beef or lamb
  • 1 large onion finely chopped
  • 2 cloves garlic minced
  • 2 medium carrots peeled and diced
  • 1 stalk celery diced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary crushed
  • 1 tablespoon all-purpose flour for thickening
  • 1 cup beef broth or chicken broth
  • 2 tablespoons Worcestershire sauce
  • 0.25 cup dry red wine optional
  • Salt and freshly ground black pepper to taste
  • Fresh parsley chopped, for garnish, optional
