Equipment

  • Slow Cooker
  • skillet,
  • Saucepan

Ingredients

Main Ingredients

  • 2 pounds beef bites (chuck roast recommended) cut into bite-sized pieces
  • 2 pounds Yukon Gold potatoes chopped into bite-sized pieces
  • 6 cloves garlic minced
  • 1/2 cup unsalted butter melted
  • 1 cup beef broth
  • 1 tbsp Italian seasoning
  • salt and pepper to taste
  • fresh parsley optional, for garnish

Instructions

  • Wash and chop the potatoes into bite-sized pieces.
  • Optionally, sear the beef bites in a skillet over medium-high heat with a small amount of oil to create a crust.
  • Layer potatoes at the bottom of the slow cooker, followed by the beef bites.
  • In a saucepan, melt butter over low heat. Add minced garlic and Italian seasoning, cooking until fragrant. Do not burn the garlic.
  • Pour the garlic butter sauce over the beef and potatoes in the slow cooker.
  • Pour beef broth over everything, making sure potatoes are partially submerged.
  • Cover and cook on low for 6-8 hours, or high for 3-4 hours, until beef is tender and potatoes are cooked through.
  • Season with salt and pepper to taste. Garnish with fresh parsley if desired. Serve hot.

Notes

Searing the beef adds extra flavor. Adjust garlic to your taste preference. For a thicker sauce, mix 1 tbsp cornstarch with 2 tbsp cold water and stir into the slow cooker in the last 30 minutes.
