- Wash and chop the potatoes into bite-sized pieces.
- Optionally, sear the beef bites in a skillet over medium-high heat with a small amount of oil to create a crust.
- Layer potatoes at the bottom of the slow cooker, followed by the beef bites.
- In a saucepan, melt butter over low heat. Add minced garlic and Italian seasoning, cooking until fragrant. Do not burn the garlic.
- Pour the garlic butter sauce over the beef and potatoes in the slow cooker.
- Pour beef broth over everything, making sure potatoes are partially submerged.
- Cover and cook on low for 6-8 hours, or high for 3-4 hours, until beef is tender and potatoes are cooked through.
- Season with salt and pepper to taste. Garnish with fresh parsley if desired. Serve hot.

Notes
Searing the beef adds extra flavor. Adjust garlic to your taste preference. For a thicker sauce, mix 1 tbsp cornstarch with 2 tbsp cold water and stir into the slow cooker in the last 30 minutes.
