Main Ingredients
  • 2 pounds beef bites (chuck roast recommended) cut into bite-sized pieces
  • 2 pounds Yukon Gold potatoes chopped into bite-sized pieces
  • 6 cloves garlic minced
  • 1/2 cup unsalted butter melted
  • 1 cup beef broth
  • 1 tbsp Italian seasoning
  • salt and pepper to taste
  • fresh parsley optional, for garnish

Method
 

  1. Wash and chop the potatoes into bite-sized pieces.
  2. Optionally, sear the beef bites in a skillet over medium-high heat with a small amount of oil to create a crust.
  3. Layer potatoes at the bottom of the slow cooker, followed by the beef bites.
  4. In a saucepan, melt butter over low heat. Add minced garlic and Italian seasoning, cooking until fragrant. Do not burn the garlic.
  5. Pour the garlic butter sauce over the beef and potatoes in the slow cooker.
  6. Pour beef broth over everything, making sure potatoes are partially submerged.
  7. Cover and cook on low for 6-8 hours, or high for 3-4 hours, until beef is tender and potatoes are cooked through.
  8. Season with salt and pepper to taste. Garnish with fresh parsley if desired. Serve hot.

Notes

Searing the beef adds extra flavor. Adjust garlic to your taste preference. For a thicker sauce, mix 1 tbsp cornstarch with 2 tbsp cold water and stir into the slow cooker in the last 30 minutes.
