Instructions
Place chicken and bell peppers in the slow cooker.
In a bowl, whisk together all sauce ingredients except cornstarch.
Pour sauce over chicken. Stir to coat.
Cook on low for 4 hours.
Stir in cornstarch slurry and peanuts, cook an additional 15 minutes until thickened.
Serve over rice or noodles.
Notes
For extra heat, add more chili flakes or a dash of Sriracha. Use chicken thighs if preferred.
