Ingredients
  

Main Ingredients
  • 1.5 lbs chicken breasts cut into bite-size pieces
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 1/2 cup roasted peanuts
Sauce
  • 1/2 cup soy sauce low sodium
  • 1/4 cup hoisin sauce
  • 2 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1 tbsp cornstarch mixed with water
  • 1 tsp crushed red pepper flakes adjust to taste

Method
 

  1. Place chicken and bell peppers in the slow cooker.
  2. In a bowl, whisk together all sauce ingredients except cornstarch.
  3. Pour sauce over chicken. Stir to coat.
  4. Cook on low for 4 hours.
  5. Stir in cornstarch slurry and peanuts, cook an additional 15 minutes until thickened.
  6. Serve over rice or noodles.
