- Place chicken and bell peppers in the slow cooker.
- In a bowl, whisk together all sauce ingredients except cornstarch.
- Pour sauce over chicken. Stir to coat.
- Cook on low for 4 hours.
- Stir in cornstarch slurry and peanuts, cook an additional 15 minutes until thickened.
- Serve over rice or noodles.
