Ingredients
  

For the Secret Sauce
  • 1/2 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 2 tbsp sweet pickle relish
  • 1 tsp Worcestershire sauce
  • 1 tsp garlic powder
For the Burgers
  • 1.5 lbs ground beef (80/20 fat content) cold
  • 4 slices American cheese
  • 4 soft brioche or potato buns
  • 2 tbsp butter melted
  • 2 leaves lettuce shredded
  • 1/4 cup onion finely chopped
  • 1 tomato sliced

Method
 

Prepare the Secret Sauce
  1. In a small bowl, whisk together the mayonnaise, ketchup, mustard, relish, Worcestershire sauce, and garlic powder. Set aside in the fridge.
Prepare the Burgers
  1. Shape the cold ground beef into loose balls, about 4 ounces each. Do not overwork the meat.
Cook the Burgers
  1. Heat a cast iron skillet over medium-high heat until it is very hot. Place a beef ball on the dry skillet and press down firmly for about 10 seconds using a spatula or smash burger press. Season generously with salt and pepper.
  2. Let the patty cook undisturbed for about 2 minutes until the bottom is dark brown and crispy. Scrape under the patty with a sharp spatula to keep the crust intact. Flip it over, add a slice of cheese, and cover with a lid for 30 seconds to melt.
Toast the Buns
  1. While the meat rests, swipe a bit of butter on your buns and toast them in the burger fat left in the pan.
Assemble the Burgers
  1. Spread a generous amount of secret sauce on the bottom bun. Layer with lettuce, onion, and tomato if using. Place your smash burger layers on top and crown with the top bun.

Notes

Ensure your beef is very cold when it hits the pan. The contrast between cold fat and a shimmering hot pan creates the best crust. Do not use oil in the pan. The beef fat is all you need for flavor and searing.
