For the Patties
  • 2 lbs 80/20 ground beef chuck divided into 8 balls
  • 2 tbsp high-smoke point oil or clarified butter
  • 1 tsp kosher salt plus more to taste
  • 1 tsp freshly cracked black pepper plus more to taste
  • 8 slices American cheese for melting
For Assembly
  • 4 buns potato buns or brioche buns, toasted
  • 2 tbsp butter for toasting buns
  • 4 leaves butter lettuce
  • 1 medium Roma tomato sliced
  • 4 slices dill pickles
  • 1/4 cup smash burger sauce mayo, ketchup, mustard, pickle juice
