- 4 cups mixed salad greens
- 4 oz smoked salmon
- 1 ripe avocado diced
- 1/4 small red onion thinly sliced
- 1 tbsp capers
- Fresh dill or parsley for garnish
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp orange juice
- 1 tsp honey
- 1 tsp Dijon mustard
- Salt and pepper to taste
Prepare the Greens: Start with 4 cups of mixed salad greens, washing and drying them thoroughly.
Add Salmon and Avocado: Arrange 4 oz of smoked salmon slices and 1 diced ripe avocado on top of the greens.
Make the Dressing: In a small bowl, whisk together 2 tbsp olive oil, 1 tbsp lemon juice, 1 tbsp orange juice, 1 tsp honey, 1 tsp Dijon mustard, and salt and pepper to taste.
Assemble the Salad: Drizzle the citrus dressing over the salad and toss gently to combine.
Garnish and Serve: Top with 1/4 small red onion slices, 1 tbsp capers, and a sprinkle of fresh dill or parsley.
