Ingredients
  

  • 4 cups mixed salad greens
  • 4 oz smoked salmon
  • 1 ripe avocado diced
  • 1/4 small red onion thinly sliced
  • 1 tbsp capers
  • Fresh dill or parsley for garnish
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp orange juice
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Method
 

  1. Prepare the Greens: Start with 4 cups of mixed salad greens, washing and drying them thoroughly.
  2. Add Salmon and Avocado: Arrange 4 oz of smoked salmon slices and 1 diced ripe avocado on top of the greens.
  3. Make the Dressing: In a small bowl, whisk together 2 tbsp olive oil, 1 tbsp lemon juice, 1 tbsp orange juice, 1 tsp honey, 1 tsp Dijon mustard, and salt and pepper to taste.
  4. Assemble the Salad: Drizzle the citrus dressing over the salad and toss gently to combine.
  5. Garnish and Serve: Top with 1/4 small red onion slices, 1 tbsp capers, and a sprinkle of fresh dill or parsley.
