Soft Strawberry Kiss Cookies

  • 1 cup unsalted butter softened to room temperature
  • 1 cup granulated sugar
  • 1 large egg at room temperature
  • 1 teaspoon pure vanilla extract
  • 2.5 cups all purpose flour
  • 1 box strawberry flavored gelatin or strawberry cake mix for that bold pink color
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt

Method
 

Prepare the Dough
  1. Preheat your oven to 350 degrees Fahrenheit and line two large baking sheets with parchment paper or silicone mats to prevent sticking.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy. This usually takes about 2 to 3 minutes of vigorous stirring or mixing.
  3. Add the egg and vanilla extract to the butter mixture. Beat well until everything is fully incorporated and smooth.
  4. Slowly whisk in the strawberry gelatin powder. Watch as the dough turns a beautiful vibrant pink color that smells absolutely divine.
  5. In a separate small bowl, sift together the dry ingredients including the flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet strawberry mixture. Stir until a soft dough forms. Be careful not to overmix, as we want to keep the texture light.
Shape and Bake
  1. Scoop about one tablespoon of dough at a time and roll it into a 1 inch ball. If you want a little extra sparkle, roll the dough ball in sparkling sugar before placing it on the baking sheet.
  2. Place the balls about 2 inches apart on your prepared cookie sheets. Bake for 8 to 10 minutes. The edges should be set but the centers should still look slightly soft.
  3. While the cookies bake, unwrap your chocolate kisses. As soon as you pull the cookies out of the oven, press one chocolate kiss firmly into the center of each cookie.
  4. Let the cookies sit on the baking sheet for 5 minutes before moving them to a wire rack to cool completely. This allows the chocolate to set slightly and the cookie to firm up.
