Ingredients

  • 1 lb Breaded Chicken Tenders all breast meat
  • 8 slices Bacon thick cut, applewood smoked
  • 1 cup Sharp Cheddar Cheese grated
  • 4 buns Hot Dog or Hoagie Buns soft
  • 1/2 cup Mayo
  • 2 tbsp Honey
  • 2 tbsp Yellow Mustard
  • 1 tbsp Dijon Mustard
  • 1 tbsp Lemon Juice
  • 1 cup Pickles optional

Equipment

  • Air Fryer,
  • skillet,
  • Mixing bowl
  • Toaster Oven

Method

Prepare the Chicken
  1. Preheat the air fryer to 400°F (200°C).
  2. Place the breaded chicken tenders in the air fryer basket and cook for 12-15 minutes, shaking the basket halfway through, until golden brown and crispy.
Fry the Bacon
  1. Place the bacon strips in a cold skillet and turn the heat to medium. Cook until crispy, about 5-7 minutes. Drain on paper towels and keep the skillet warm.
Whisk the Sauce
  1. In a small bowl, combine mayo, honey, yellow mustard, Dijon mustard, and lemon juice. Whisk until smooth.
Toast the Buns
  1. Lightly butter the hot dog buns. Place them face down in the warm skillet for about 1 minute to toast.
Assemble the Sandwiches
  1. Lay a hot chicken tender inside each toasted bun. Top immediately with a generous sprinkle of grated cheddar cheese.
  2. Place a crisp strip of bacon on top of the cheese. The warmth of the bacon will help lock the cheese to the chicken.
  3. Generously drizzle the honey mustard sauce over the sandwiches.
Serve
  1. Serve warm and enjoy!

Notes

These sandwiches are best enjoyed the moment the cheese has reached its gooey peak. Store the components separately if possible. If you have already assembled the sandwiches, keep them in an airtight container in the fridge for no more than two days. For reheating, use a toaster oven or an air fryer at 350°F (175°C) for 5 minutes to revive the crunch of the chicken and melt the cheese anew.
