  • 1.5 lbs Ground Beef 90/10 lean blend
  • 2 large Sweet Potatoes peeled and cut into half-inch cubes
  • 2 Bell Peppers one red and one green, diced
  • 1 large Onion diced
  • 3 cloves Garlic minced
  • 1 can Black Beans drained and rinsed
  • 1 cup Corn fresh or frozen
  • 1 can Diced Tomatoes with green chilies
  • 2 tbsp Chili Powder
  • 1 tbsp Cumin
  • 1 tbsp Paprika
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 cup Beef Broth
  • 1 cup Shredded Cheese
  • 1 bunch Cilantro chopped
  • 2 Avocado sliced
  • 1 cup Sour Cream optional

Method
 

Searing the Base
  1. Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it into small crumbles with a wooden spoon. Drain excess fat.

  1. Add the diced onions and bell peppers to the skillet. Sauté until the onions are translucent and soft. Add the minced garlic, chili powder, cumin, paprika, salt, and black pepper. Toast the spices for about a minute.
