  • 1 lb thinly sliced ribeye or sirloin or use pre-marinated bulgogi beef
  • 2 tbsp bulgogi sauce store-bought or homemade
  • 1 tbsp gochujang adjust for spice level
  • 2 tsp sesame oil
  • 2 cloves garlic minced
  • 1 tsp fresh ginger grated
For the Vegetables
  • 1 cup kimchi drained and roughly chopped
  • 0.5 cup sliced mushrooms cremini or shiitake
  • 0.5 cup sliced bell peppers any color
For the Cheese and Buns
  • 4 slices provolone cheese or mozzarella for a milder melt
  • 4 soft brioche buns or hoagie rolls
  • 2 green onions sliced for garnish
