Ingredients
  

  • 4 large Chicken Breasts Even-sized
  • 4 cups Fresh Spinach Fresh
  • 4 oz Cream Cheese Softened
  • 1 cup Mozzarella Cheese Shredded
  • 1 cup Cheddar Cheese Shredded
  • 3 cloves Garlic Minced
  • 1 small Onion Diced
  • 2 tbsp Olive Oil
  • 2 tbsp Butter
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tbsp Herbs Dried

Method
 

Prepare Filling
  1. Combine softened cream cheese, mozzarella, and cheddar cheese in a bowl.
  2. Sauté spinach with garlic and onion in olive oil until wilted. Cool slightly before mixing with cheese.
Prepare Chicken
  1. Slice a pocket into each chicken breast, being careful not to cut all the way through.
  2. Fill each pocket with spinach and cheese mixture. Secure with toothpicks if needed.
  3. Rub chicken with olive oil and season with salt, pepper, and herbs.
Cook Chicken
  1. Heat skillet with butter over medium-high heat. Sear chicken for 5-7 minutes per side until golden brown.
  2. If needed, transfer to oven at 375°F for 10 minutes to ensure internal temperature reaches 165°F.
