Prepare for Baking
- Preheat your oven to 350 degrees Fahrenheit and line two large baking sheets with parchment paper or silicone mats.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy. This usually takes about 2 minutes.
- Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- Add the green gel food coloring drop by drop until you reach your desired shade of green. Remember the color will stay pretty true during baking.
- In a separate medium bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix the dough.
- Fold in the semi sweet chocolate chips by hand using a spatula.
- Scoop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10 to 12 minutes or until the edges are set but the centers still look slightly soft.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes
To get the best results with your st patricks day Chocolate Chip Cookies use gel food coloring instead of liquid drops. Gel provides a more intense color without altering the consistency of your dough. Another tip is to chill your dough for at least 30 minutes before baking. This prevents the cookies from spreading too much and helps develop a deeper flavor. For a fun variation try using white chocolate chips to represent pieces of silver amidst the green. If you love a good mashup consider trying these chewy mint chocolate chip cookies recipe by adding a teaspoon of peppermint extract. You can also press a few extra chocolate chips into the tops of the cookies immediately after they come out of the oven for a picture perfect look. Store these cookies in an airtight container at room temperature for up to 5 days. To keep them extra soft add a slice of white bread to the container. If you want to save them for later you can freeze the baked cookies for up to 3 months. Just thaw them at room temperature when you are ready to eat. For that fresh out of the oven experience reheat a cookie in the microwave for about 10 seconds until the chocolate chips are melty and warm.
