Ingredients
  

For the Strawberry Base
  • 2 cups fresh strawberries diced, plus more for topping
For the Creamy Mixture
  • 1 cup greek yogurt plain or vanilla, or coconut yogurt for vegan
  • 4 tbsp maple syrup or honey, adjust to taste
  • 2 tsp vanilla extract
  • 1 oz cream cheese optional, softened for richer flavor
For the Oats
  • 2 cups rolled oats old-fashioned for best texture
  • 4 tbsp chia seeds for thickening

Method
 

  1. Wash and hull the fresh strawberries. In a bowl, add 1 cup of diced strawberries and mash with a fork until juices release, creating a chunky puree. Set aside.
  2. In a large bowl or directly in a jar, combine the milk, Greek yogurt, maple syrup, vanilla extract, and optional cream cheese. Whisk vigorously until smooth and creamy.
  3. Add the rolled oats and chia seeds to the creamy mixture. Stir thoroughly until oats and chia are fully submerged and no dry clumps remain.
  4. Gently fold in the mashed strawberry mixture to create swirls. Add remaining diced strawberries and stir lightly. Divide into 4 mason jars.
  5. Seal jars tightly and refrigerate for at least 4 hours, or overnight, to allow oats to thicken.
  6. Stir and serve cold, topped with extra strawberries, granola, or yogurt.
