  • 2.25 cups All-Purpose Flour
  • 2 tsp Active Dry Yeast
  • 1 cup Warm Milk
  • 1 tbsp Granulated Sugar
  • 1 tbsp Unsalted Butter Melted
  • 2 Large Eggs Room temperature
  • 1 tsp Salt
Filling Ingredients
  • 2 cups Strawberries Chopped
  • 1 tbsp Granulated Sugar
  • 1 tsp Ground Cinnamon
  • 1 tbsp Lemon Juice
  • 1 tbsp Cornstarch Optional
Glaze Ingredients
  • 8 oz Cream Cheese Room temperature
  • 2 cups Powdered Sugar
  • 2 tbsp Milk
  • 1 tsp Vanilla Extract

Method
 

Prepare the Dough
  1. In a large bowl, combine warm milk, sugar, and yeast. Let it sit until foamy.
  2. Whisk in the melted butter and eggs. Gradually add the flour and salt, mixing until a soft dough forms.
  3. Knead the dough on a floured surface for about 5 to 7 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm, draft-free spot for about an hour.
Prepare the Filling
  1. Toss the chopped strawberries with sugar, cinnamon, and lemon juice. If the berries are very juicy, add a teaspoon of cornstarch to keep the rolls from getting too soggy.
Roll and Fill
  1. Once the dough has doubled in size, punch it down and roll it out into a large rectangle.
  2. Spread softened butter across the surface, then top with the strawberry mixture. Sprinkle a little extra cinnamon for good measure.
  3. Roll the dough up tightly into a log. Use a sharp knife or unflavored dental floss to cut the log into equal rounds. Place them in a greased baking pan.
Second Rise and Bake
  1. Let the rolls rise again for 30 minutes.
  2. Preheat the oven to 350 degrees. Bake the rolls for about 25 minutes, or until golden brown on top and the strawberries bubble in the center.
Glaze
  1. While the rolls are baking, whisk together cream cheese, powdered sugar, milk, and vanilla extract.
  2. Spread the glaze over the warm rolls so it seeps into the spirals.
