Method
 

Preparation
  1. Preheat your air fryer or oven to 350°F (175°C). Line two large baking sheets with parchment paper. Unwrap all chocolate kisses and have them ready.
  2. In a large mixing bowl, whisk together the strawberry cake mix, all-purpose flour, baking powder, and salt.
  3. In a separate medium bowl, whisk the two large eggs until lightly beaten. Add the vegetable oil, strawberry extract, and optional food coloring; mix well.
  4. Pour wet ingredients into the dry ingredients bowl. Mix with a rubber spatula or wooden spoon until just combined and a soft dough forms. Do not overmix.
  5. Place granulated sugar in a shallow bowl. Scoop dough (about 1 tablespoon per cookie) and roll into balls between your hands. Roll each ball in sugar until coated.
  6. Place sugar-coated balls 2 inches apart on prepared baking sheets. Bake for 8-10 minutes until set, puffed, and edges are lightly golden.
  7. Immediately press one chocolate kiss into each warm cookie's center. Cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
