Ingredients

  • 1 lb Ground Beef lean blend
  • 1 packet Taco Seasoning
  • 4 large Flour Tortillas burrito size
  • 2 cups Seasoned Rice cooked with turmeric and tomato bouillon
  • 1 cup Nacho Cheese Sauce
  • 1 cup Shredded Mexican Cheese Blend
  • 1/2 cup Reduced Fat Sour Cream
  • 1 cup Fiesta Strips or Fritos

Equipment

  • Large skillet,
  • Mixing bowl

Method

  1. In a large skillet over medium heat, cook the ground beef until it is no longer pink. Drain any excess fat.
  2. Add your taco seasoning and a splash of water. Let it simmer until the sauce thickens and coats the beef beautifully.
  3. While the beef simmers, ensure your seasoned rice is fluffy and warm.
  4. Soften your flour tortillas in a dry pan for about 10 seconds per side. They should be warm and flexible.
  5. Spread a generous spoonful of nacho cheese sauce in the center of the tortilla.
  6. Top the cheese with a scoop of seasoned beef and a scoop of rice. Sprinkle the shredded Mexican cheese blend over the top.
  7. Add a dollop of sour cream and a handful of fiesta strips.
  8. Fold the sides in and roll tightly. Sear the outside of the burrito on the skillet for 30 seconds to lock in the melty cheese.

Notes

For a spicy kick, add pickled jalapeños or a swirl of fire sauce inside before rolling. If you have more mouths to feed and less time to roll, try turning these ingredients into a easy beef enchilada casserole recipe.
