Taco Lasagna Stacks

A delicious fusion of tacos and lasagna, these individual stacks bring together familiar flavors in an unexpected, family-friendly format that's perfect for weeknight dinners.

Ingredients
  

Meat Layer
  • 1 lb lean ground beef 90/10 preferred
  • 1 packet taco seasoning or 2-3 tbsp homemade
  • 1/2 cup water
  • 1/2 cup salsa plus more for serving
Layer Components
  • 8 pieces small flour tortillas 6-inch
  • 1 can refried beans 15 oz
  • 1 jar salsa 16 oz
  • 2 cups shredded Mexican cheese blend or cheddar
  • 1 can black olives 2.25 oz, sliced
  • 4 stalks green onions thinly sliced
  • 1 tbsp olive oil or avocado oil
Garnishes (Optional)
  • Sour cream or Greek yogurt for serving
  • Chopped cilantro for serving
  • Diced avocado for serving

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a large baking sheet.
  2. In a large skillet, heat olive oil over medium-high heat. Add the ground beef and cook, breaking it apart, until fully browned. Drain excess fat.
  3. Sprinkle taco seasoning over the beef. Add 1/2 cup water and 1/2 cup salsa. Stir and simmer for 3-5 minutes until sauce thickens.
  4. While meat simmers, warm refried beans in a microwave-safe bowl for about a minute.
  5. Place 4 tortillas on the baking sheet. Spread a layer of warm refried beans over each tortilla. Top with seasoned ground beef.
  6. Place a second tortilla on top of each stack. Press gently. Spread salsa over tortillas and sprinkle with cheese.
  7. Sprinkle black olives and most of the green onions over the cheese. Bake for 12-15 minutes until golden and cheese melts.
  8. Let stacks rest for a few minutes. Garnish with sour cream, cilantro, and remaining green onions before serving.

Notes

For crispier tortillas, lightly toast them in a dry skillet for 30 seconds per side before assembling. To make vegetarian, substitute ground beef with black beans and corn. For gluten-free, use corn tortillas.
