- Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish and set it aside.
- Place a large skillet over medium-high heat. Add the ground beef and diced onion. Cook together, breaking the beef into small crumbles, until beef is no longer pink and onion has softened, about 8 to 10 minutes.
- Carefully tilt the skillet and spoon out excess grease. Discard in a heatproof container.
- Reduce heat to low. Stir condensed cream of mushroom soup, sour cream, milk, garlic powder, and onion powder into the skillet with the beef. Season generously with salt and pepper. Stir until well combined and creamy.
- Remove skillet from heat. Stir in 1 cup of the shredded cheddar cheese. If using green beans or other vegetables, fold them in gently. Mix until cheese is just starting to melt.
- Pour the beef mixture into your prepared baking dish and spread it into an even layer.
- Arrange the frozen tater tots in a single, even layer over the beef mixture.
- Place the casserole in your preheated oven and bake for 30 to 35 minutes, until the sauce is bubbly and the tater tots are light golden brown.
- Carefully remove the casserole from the oven. Sprinkle the remaining 1 cup of cheddar cheese over the top of the tater tots.
- Return the casserole to the oven and bake for another 5 to 10 minutes, until the cheese is completely melted and bubbly.
- Let the casserole rest on the counter for about 10 minutes before serving to allow it to set up.

Notes
To make ahead: Assemble the entire casserole without the tater tots, cover it, and refrigerate for up to 24 hours. When ready to bake, simply top with frozen tater tots and add about 10 minutes to the initial baking time. For best results when reheating, avoid the microwave as it can make the tater tots soggy. Instead, reheat in the oven at 350°F for 20-25 minutes, covered with foil. Remove foil for the last 5-10 minutes for a crispier topping.
