Ingredients
  

  • 2 cups orzo pasta
  • 1 pound boneless skinless chicken breasts cubed
  • 3 cups chicken broth
  • 1 can diced tomatoes drained
  • 1 cup fresh basil leaves chopped
  • 2 cloves garlic minced
  • 1/2 cup Parmesan cheese grated
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • red pepper flakes optional, for heat

Method
 

  1. In a large crockpot, add olive oil and spread to coat the bottom.
  2. Add cubed chicken breasts, then sprinkle over salt, pepper, and garlic.
  3. Pour in the drained diced tomatoes and chicken broth.
  4. Set crockpot on low and let it cook for 3 hours.
  5. After 3 hours, stir in orzo pasta and continue to cook on low for an additional 30 minutes, stirring occasionally.
  6. Until the orzo is tender, add chopped basil leaves and grated Parmesan. Stir to combine.
  7. Adjust seasoning to taste - more salt or pepper if desired.
