Equipment

  • Traeger grill or smoker
  • Fish spatula
  • Meat thermometer
  • Grill tongs

Ingredients

  • 4 fish fillets salmon, trout, or your preferred choice
  • 2 tablespoons olive oil
  • 1 tablespoon Traeger Blackened Saskatchewan Rub or your favorite seasoning
  • 1 lemon sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh herbs like dill or parsley for garnish

Instructions

  • Preheat Your Traeger Grill:
  • Set your Traeger grill to 350°F (177°C) and preheat with your choice of wood pellets (alder or applewood work well for fish).
  • Prepare the Fish:
  • Rinse the fish fillets under cold water and pat them dry with paper towels.
  • Brush the fillets with olive oil on both sides to prevent sticking and to enhance the flavor.
  • In a small bowl, mix the Traeger Blackened Saskatchewan Rub, garlic powder, paprika, salt, and black pepper.
  • Sprinkle the seasoning mixture evenly over the fish fillets, coating both sides.
  • Grill the Fish:
  • Place the seasoned fish fillets directly on the grill grates, skin side down if applicable.
  • Close the lid and grill for 10-15 minutes, or until the fish flakes easily with a fork. The internal temperature should reach 145°F (63°C).
  • During the last few minutes of grilling, place lemon slices on top of each fillet for an extra burst of citrus flavor.
  • Serve:
  • Remove the fish from the grill and transfer to a serving platter.
  • Garnish with fresh herbs and a squeeze of grilled lemon juice.
  • Serve immediately with your favorite sides, such as grilled vegetables or a fresh salad.

Notes

• Wood Pellets: Alder or applewood pellets work best for a mild, sweet smoke flavor.
• Resting: Allow the fish to rest for a few minutes after grilling to retain moisture.
• Serving Suggestions: Pair with grilled vegetables or a light salad for a complete meal.
