- If using dry white wine, slowly pour it into the pan, scraping up any browned bits from the bottom. Simmer for 2-3 minutes until the wine is slightly reduced.
- Gradually whisk in the turkey or chicken broth, a little at a time, ensuring there are no lumps. Continue whisking until smooth.
- Bring the gravy to a simmer, then reduce the heat to low and let it simmer for 10-15 minutes, or until it has thickened to your desired consistency. Stir occasionally to prevent sticking.
- Stir in the dried thyme and sage. Season with salt and pepper to taste. If desired, stir in the butter for extra richness and the apple cider vinegar for a touch of brightness. Taste and adjust seasonings as needed.
- For an ultra-smooth gravy, strain it through a fine-mesh sieve before serving (optional).
- Ladle generously over slices of your thanksgiving turkey, mashed potatoes, thanksgiving stuffing, and any other thanksgiving sides you’re serving.
