- Prepare Your Base: In a large bowl, combine the rolled oats, ground coffee, chia seeds, and sea salt. Stir to evenly distribute the ingredients.
- Add the Wet Ingredients: In a small saucepan over low heat, melt the almond butter, coconut oil, and maple syrup together. Once smooth, add in the vanilla extract and mix well.
- Combine and Mix: Pour the wet mixture into the dry ingredients and stir until everything is well coated. The dough should be sticky enough to hold together when pressed.
- Fold in Chocolate Chips: Gently fold in the dark chocolate chips, making sure they're evenly spread throughout the mixture.
- Shape the Bites: Using a tablespoon or your hands, scoop out portions of the mixture and roll them into bite-sized balls. If the dough feels too sticky, refrigerate it for about 10 minutes to firm up.
- Chill and Serve: Place the bites on a parchment-lined tray and refrigerate for at least 30 minutes to set. Once firm, transfer them to an airtight container. These bites can last in the fridge for up to a week or in the freezer for up to a month.
