Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup almond butter or any nut butter of your choice
  • 1/4 cup maple syrup
  • 2 tablespoons ground coffee make sure it’s fine grind
  • 1/4 cup chia seeds
  • 1/4 cup dark chocolate chips vegan
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract
  • A pinch of sea salt

Method
 

  1. Prepare Your Base: In a large bowl, combine the rolled oats, ground coffee, chia seeds, and sea salt. Stir to evenly distribute the ingredients.
  2. Add the Wet Ingredients: In a small saucepan over low heat, melt the almond butter, coconut oil, and maple syrup together. Once smooth, add in the vanilla extract and mix well.
  3. Combine and Mix: Pour the wet mixture into the dry ingredients and stir until everything is well coated. The dough should be sticky enough to hold together when pressed.
  4. Fold in Chocolate Chips: Gently fold in the dark chocolate chips, making sure they're evenly spread throughout the mixture.
  5. Shape the Bites: Using a tablespoon or your hands, scoop out portions of the mixture and roll them into bite-sized balls. If the dough feels too sticky, refrigerate it for about 10 minutes to firm up.
  6. Chill and Serve: Place the bites on a parchment-lined tray and refrigerate for at least 30 minutes to set. Once firm, transfer them to an airtight container. These bites can last in the fridge for up to a week or in the freezer for up to a month.
