Cauliflower Rice Keto Lunch Bowl
  • 1 head cauliflower pulsed into rice
  • 1 tbsp olive oil
  • 1 lb chicken sliced
  • 1 avocado avocado sliced
  • 1 cup lettuce chopped
  • 1/4 cup nuts toasted
  • 1 tbsp lime juice

Method
 

Prepare the Cauliflower Rice
  1. Pulse cauliflower florets in a food processor until they reach a rice-like consistency.
  2. In a large skillet over medium heat, add olive oil and sauté the cauliflower until tender but still has a bit of bite, about 5 to 7 minutes.
Sear the Protein
  1. Season the chicken with salt, pepper, and smoked paprika. Pan sear until the edges are golden and crispy.
Assemble the Bowl
  1. Place a generous scoop of cauliflower rice in a bowl. Top with sliced chicken, avocado, lettuce, and toasted nuts.
  2. Finish with a squeeze of lime juice.
