  • 1 large onion diced
  • 2 carrots peeled and sliced into half moons
  • 2 stalks celery diced
  • 1 small butternut squash peeled and cubed
  • 3 cloves garlic minced
Seasonings
  • 1 teaspoon dried oregano
  • 1 can crushed tomatoes 28 ounces
  • 6 cups high quality vegetable or chicken broth
Pasta and Greens
  • 1 can cannellini beans drained and rinsed
  • 1 cup dry ditalini or small shell pasta
  • 2 cups chopped kale or Swiss chard
Finishing Touches
  • 1 tablespoon lemon juice
  • salt and black pepper to taste
  • freshly grated Parmesan cheese for serving
