Ingredients
  

Dry Ingredients
  • 1 ¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp ground cinnamon
Wet Ingredients
  • 3 large ripe bananas very ripe, mashed
  • ½ cup unsalted butter melted
  • ¾ cup light brown sugar packed
  • 1 large egg at room temperature
  • 1 tsp vanilla extract
  • ¼ cup Greek yogurt or sour cream, optional

Method
 

  1. Grease a 6 or 7 inch loaf pan and lightly flour it, or line with parchment paper. Preheat your air fryer to 320°F (160°C).
  2. In a medium bowl, whisk together the flour, baking soda, salt, and ground cinnamon.
  3. In a separate large bowl, mash the very ripe bananas until mostly smooth. Add the melted butter, brown sugar, room temperature egg, vanilla extract, and optional Greek yogurt. Whisk until well combined.
  4. Gently pour the dry ingredients into the wet ingredients. Mix only until the flour is just combined, being careful not to overmix.
  5. Pour the batter into the prepared pan and smooth the top with a spatula. Add any desired mix-ins on top if using.
  6. Carefully place the pan into the preheated air fryer basket. Cook for 20-25 minutes. Around the 15 minute mark, check the top and loosely cover with foil if browning too quickly.
  7. After 20-25 minutes, insert a toothpick into the center. If it comes out clean or with a few moist crumbs, it's done. If not, continue cooking in 3-5 minute increments until fully baked.
  8. Remove the pan from the air fryer and let the bread cool in the pan for about 10 minutes before turning out onto a wire rack to cool completely.

Notes

For best results, use very ripe bananas with lots of brown spots. This recipe works well with various substitutions like whole wheat flour, coconut sugar, or vegan alternatives.
