  • 1/2 cup Cottage Cheese Full fat preferred
  • 2 tbsp Flour or Almond Flour Use almond flour for a low carb version
  • 1 tbsp Sweetener Maple syrup or honey
  • 1 small Egg
  • 1 tsp Cinnamon Generous amount
  • 1/4 tsp Baking Powder
  • 1/2 tsp Vanilla Extract
  • 1 pinch Pinch of Salt
  • 2 tbsp Cream Cheese Optional frosting

Method
 

  1. Place cottage cheese in a small bowl and mash with a fork or blend until smooth.
  2. Add egg, vanilla extract, and sweetener to the cheese. Whisk until pale and bubbly.
  3. Fold in flour, baking powder, cinnamon, and salt. Stir until just combined.
  4. Take a tiny bit of extra cinnamon and a drop of maple syrup and swirl it through the batter with a toothpick.
  5. Place the mug in the microwave and cook on high for about 90 seconds to 2 minutes. Watch through the glass as the cake rises and expands.
  6. Let the cake sit for one minute. While it rests, whisk together cream cheese and a splash of milk to create a quick glaze. Drizzle it over the warm cake.
