Chicken Preparation
  • 2 large chicken breasts sliced into cutlets
  • 1 cup all-purpose flour seasoned with salt and black pepper
  • 2 large eggs beaten
  • 1 cup Panko breadcrumbs mixed with grated parmesan cheese
Caesar Dressing
  • 1 cup mayonnaise
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 1 tbsp anchovy paste
  • 1 clove garlic minced
  • 1 cup garlic croutons crushed
Assembly
  • 4 large bread rolls brioche or ciabatta
  • 4 large romaine lettuce inner leaves
  • 1 cup parmesan cheese grated

Method
 

Prepare the Chicken
  1. Set up three shallow bowls. One with seasoned flour, the second with beaten eggs, and the third with Panko breadcrumbs and grated parmesan cheese.
  2. Dredge the chicken first in flour, then egg, then the breadcrumbs, pressing firmly so the coating sticks.
