Grinder Sandwich Italian Deli Salad

A deconstructed version of the classic Italian deli sandwich, this vibrant salad captures all the flavors of a traditional grinder without the bread. Perfect for family gatherings, potlucks, or a light weeknight dinner.

Ingredients
  

For the Salad Base:
  • 1 large head iceberg lettuce finely shredded
  • 1/2 pound deli ham thinly sliced
  • 1/4 pound Genoa salami thinly sliced
  • 1/4 pound capicola or spicy soppressata, thinly sliced
  • 1/2 pound provolone cheese thinly sliced
  • 1 cup cherry tomatoes halved
  • 1/2 large red onion red onion very thinly sliced
  • 1/2 cup pepperoncini peppers sliced, plus 2 tablespoons of the brine
For the Creamy Grinder Dressing:
  • 1 cup real mayonnaise
  • 1/4 cup red wine vinegar
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper freshly ground
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil
  • 2 tablespoons brine from the pepperoncini jar

Method
 

  1. Prepare the dressing by combining the mayonnaise, red wine vinegar, minced garlic, dried oregano, black pepper, salt, olive oil, and pepperoncini brine in a medium sized bowl. Whisk everything together until smooth and creamy.
  2. Chop the salad ingredients: thin slices of ham, salami, capicola, and provolone cheese. Also shred the iceberg lettuce finely using a sharp knife.
  3. Add the chopped meats and cheese to a large mixing bowl.
  4. Add the shredded lettuce, sliced red onion, halved cherry tomatoes, and sliced pepperoncini peppers to the bowl with the meats and cheese.
  5. Pour three quarters of the chilled dressing over the salad. Gently toss everything together with two large spoons or clean hands until every leaf and strip is lightly coated. Add additional dressing as desired.
  6. Serve immediately on a large platter or in individual bowls, garnished with extra oregano or grated Parmesan if desired.

Notes

This salad is best served immediately with crisp lettuce and light dressing. Leftovers can be stored in separate containers in the refrigerator for up to 3 days and dressed right before serving. The dressing can be stored separately for up to a week.
